I am vegan, so I don't eat a turkey at Thanksgiving, I will eat either a Celebration Roast or a Tofurky, I love it with my Mom's potato dumplings (veganized of course) and lots of vegan gravy.

ReplyDeleteKat's Muschroom Sausage Stuffing. (Terry K). Here is the recipe if anyone wants to try it. It is wonderful.
ReplyDeleteKat's Mushroom Sausage Stuffing
4 onions, thinly sliced or chopped
2 to 4 Tablespoons olive oil
4 cups coarsely chopped regular white button mushrooms
Salt & Pepper
1/2 cup dry white wine
2 Tablespoons butter
2 lbs spicy or plain turkey sausage
1 bunch fresh tarragon, leaves only
Sauté onions in olive oil over medium-low heat approx 30 minutes until
caramelized.
Turn the heat up to medium-high and add the mushrooms. Sauté the
mushrooms until crisp on the edges, about 10 to 15 minutes. Season
with salt & pepper.
Turn the heat to high and add the wine. Let the wine cook off for a
couple of minutes, then lower the heat and simmer with the mushrooms
for another 10 minutes.
Stir in the butter 1 Tablespoon at a time after combined remove from
the heat and set aside.
In a large skillet, brown the sausage. When cooked through about 7
minutes add the mushroom mixture along with the tarragon and combine.
I prepare ahead of time on Thanksgiving and warm up or keep warm in
the oven!!
