Apple Pecan Crisp
1 cup all-purpose flour
1/2 cup light brown sugar
1 cup white sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1 tablespoon cornstarch
1/2 teaspoon ground ginger
1 teaspoon ground cinnamon
6 Cups apples - peeled, cored and chopped
2 tablespoons lemon juice
1 Cup of Chopped Pecans
1/2 cup butter cut up
Crumb topping: Mix flour, brown sugar, 2/3 cup of white sugar, 1 teaspoon cinnamon and nutmeg in a bowl.
Combine butter with the flour mixture until crumbs form. Stir in Pecans.
Cornstarch Mixture: Whisk together 1/3 cup sugar, cornstarch, ginger, and 1 teaspoon cinnamon.
Put the apples in a slow cooker,
add the cornstarch mixture to the apples. Mix in lemon juice.
Sprinkle the Pecan Crumb topping on top. Cover and cook on low for 4 hours or until apples are tender.
Keep cooking for one hour with the lid vented.
Serve alone or with vanilla ice cream.
