I was so excited to get the chance to work with Luxury Pasta on a recipe contest. Luxury Pasta is a staple in my pantry. I grew up with always having it. In a family where pasta is served at least 3 times a week, how could I not look at Luxury Pasta as part of my family?
I was asked to be a part of Luxury's Holiday Recipe Contest.
Jambalaya Pasta is one of my favorite Holiday dishes. It is easy to make and you can make up a big batch to take to parties or feed a big family. It is a perfect take along casserole. My family will eat it hot or cold.
The greatest part is...it uses up some of that leftover
Thanksgiving Turkey!!!
Here is the recipe:
Jambalaya Pasta
Prep Time: 10 minutes
Cooking Time: 45 Minutes
Servings: 8-10
Ingredients:
1 pack of Luxury Brand Penne Pasta
1 10oz can of Rotel Tomatoes
1 6oz can of Tomato Paste
3 cups of Leftover Turkey from Thanksgiving (cut up in bite size pieces)
3 cups of Smoked Sausage (cut up in bite size pieces)
1 bunch of green onions or 1 small white onion diced
1 green bell pepper diced
3 teaspoons of garlic powder
Salt to taste
Olive oil
Water
Shredded Mozzarella Cheese (Optional)
Set oven to 350 degrees.
Bring water in a pot to a boil for penne pasta.
While you are waiting...
In a separate stock pot, sprinkle olive oil to just coat the bottom. Add onion and bell pepper. Saute
on medium heat for approximately 10 minutes, stirring constantly. Add Rotel and stir.
Saute for 5 more minutes. Add tomato paste. Use the can and add two cans of water.
Mix well. Add sausage, turkey, garlic powder and salt. Mix well. Turn down to Medium-Low heat.
Stir occasionally.
Cook penne pasta as directed. Drain.
Add Pasta to the tomato and meat mixture and mix well. Place all of it in a casserole dish.
Sprinkle lightly with Mozzarella Cheese (Optional). Cover with aluminum foil and
bake for 15-20 minutes.
Serve with Garlic Bread on the side.
