Crabmeat Stuffed Flounder



Crabmeat Stuffed Flounder

2 sticks of real butter

1 small  onion minced

1 bunch chopped green onions 

1 large celery stalk, minced

1/4 green bell pepper, minced

1/4 red bell pepper, minced

3 cloves garlic, minced

1 tablespoon parsley

1/3 cup italian style bread crumbs

1/4 cup parmesan cheese, grated

12 oz  crabmeat

1 teaspoon cajun seasoning

Dash salt

2-3 lbs flounder filets


Instructions for baking stuffed flounder:

1. Preheat oven to 400 degrees F. Lightly coat a large casserole dish with cooking spray.

2. Heat 3/4 stick of butter over medium heat in a large saucepan. Stir in onions, bell pepper, celery, parsley and garlic. Cook until onions are soft and almost clear.

3. Stir in crabmeat, Cajun seasoning, bread crumbs and salt. Cook on low heat for 5 minutes. Take off of burner.

4. Rub flounder with softened butter. Stuff fish with crab mixture, or roll it and place in greased pan. Melt one stick of butter and drizzle over stuffed flounder filets. 

5. Bake for 20 minutes, or until filets are white and flakey.

6. Garnish with lemon wedge.

  4. My husband & I love crab meat. You can't beat a recipe that has crab, garlic, green & red peppers & fish. So many healthy ingredients and I'm sure it's delicious. Thank you for the recipe.
